SWEET POTATOES – Choose sweet potatoes that are firm and void of any bruises. To mash, you can use an electric mixer, food processor, immersion blender, or a hand masher.

- Peel and dice the sweet potatoes into 1 inch cubes. Add to a pot with 4 cups of water. Bring to a boil and cover for 10 minutes or until fork tender. Drain the sweet potatoes of excess water and transfer to a large mixing bowl.

- Add the milk, butter, salt, and pepper to the bowl and use a hand mixer to quickly mash the sweet potatoes.

- Transfer to a serving bowl and smooth with the back of a spoon to create ridges. Top with two pads of butter and fresh parsley. The butter will melt into the ridges ensuring a silky, buttery drizzle in every spoonful.
