Freeze them assembled but unbaked (cover tightly with foil, freeze up to 3 months, thaw overnight in the fridge, then bake as directed). Or freeze them fully baked and cooled (slice into portions, wrap individually, freeze up to 3 months, reheat covered at 350°F until heated through).
80/20 ground chuck is the sweet spot for almost all of these. The fat carries flavor, and since you’re draining it after browning, you don’t end up with a greasy casserole. 90/10 sirloin works if that’s what you have, but you may want to add a pat of butter or a splash of broth to compensate for the missing richness.
For almost every casserole on this list, yes. Browning the beef before it goes into the casserole develops the deep, savory flavor that raw or boiled beef can’t match.
