Strawberry Beet Smoothie
A lot of people associate beets with savory foods. And for good reason! Beets pair beautifully with savory ingredients like feta (in this Roasted Beet Salad) or rosemary (in this Beet Galette). But given that beets are where table sugar come from, I think it’s about time we work beets into a few sweet recipes! Case in point, this Strawberry Beet Smoothie.
This smoothie has just a handful of ingredients and can be made ahead of time, making for a hidden veggie-packed breakfast or snack that actually fills you up, while also being full of energizing nutrients.

A lot of people think beets taste like dirt, and I’m inclined to agree. But there are ways to make them actually not taste like dirt! The first is roasting, which brings out the natural sweetness of beets and rounding off that distinctly sharp flavor.

The second is by combining beets with a creamy element. Today, those elements are yogurt and banana! When it all comes together you have the most beautiful (and deliciously healthy) Strawberry Beet Smoothie that you’re sure to love. A great twist on the traditional strawberry banana smoothie.

To make this Strawberry Beet Smoothie you’ll need:
- 1 large red beet
- 1 cup strawberries
- 1 banana
- 1/2 cup strawberry yogurt
- Splash of milk, as needed

- 1 red beet large
- 1 cup strawberries
- 1 banana
- ½ cup strawberry yogurt
- Splash of milk as needed
Before You Begin
Instructions
- Peel and dice the beet into 1/2 inch cubes. Drizzle with 1 Tbsp water and place in an aluminum foil pouch. Cook for 30 minutes at 400 degrees F, or until fork tender. Allow roasted beet to cool.
- In a blender, mix beets, strawberries, banana, yogurt, and milk as needed to get things moving.
