
I know, right? Another ice cream recipe, sheesh! I can’t help it, I’ve been experimenting with different flavors and came up with this as soon as I remembered I had some root beer extract in the pantry. We love root beer floats (and root beer floats for grown ups!) so this was a given. Usually made with vanilla ice cream and root beer soda, root beer floats have been a favorite for many years. Well, now you can have it in ice cream form.

All four of my kids are huge root beer fans. I am too, and I really don’t drink soda. I will make an exception for root beer though. This is really easy to make and if you start early enough, you can be enjoying it that same evening.

Root Beer Ice Cream

- 14 oz can sweetened condensed milk
- 2 cups heavy whipping cream
- 1 cup 1% milk
- 4 teaspoons root beer extract
- 1 ½ teaspoons vanilla
Instructions
- Whisk all ingredients together then place in ice cream maker and process according to manufacturer's directions.
- Turn churned ice cream into a freezer container and freeze overnight, or a minimum of 4 hours.
Nutrition

I could not find root beer extract, so our kitchen shop had root beer flavored oil! Is that okay to use for root beer ice cream?
