BERRIES – If you’re seeing this post while it’s strawberry season, now is the perfect excuse to go strawberry picking or to grab some local fresh strawberries from the farmer’s market. Luckily even if it isn’t strawberry season, these berries are available year-round in grocery stores. Look for bright red strawberries that have a slight sheen to them with a healthy green cap in stores. The blueberries are an optional garnish that can be omitted if preferred.
How to Make Cheesecake Stuffed Strawberries

- Slice off the stems of the strawberries so that they are able to sit flat with the “stem” side facing down.
- On the opposite end of the strawberry, cut an X from the tip through part of the base, but do not slice all the way through or your strawberries will fall apart. Repeat with the remaining strawberries and set aside.
- In a large mixing bowl, beat the cream cheese with an electric mixer until smooth.
- Add the powdered sugar, cream and vanilla to the cream cheese and beat until well combined.
- Fill a pastry bag or ziploc bag with the end cut off and pipe the cream cheese filling into each sliced strawberry.
- Top each strawberry with a fresh blueberry and chill in the refrigerator for one hour or until ready to serve. Enjoy!

Store the stuffed strawberries in an air-tight container kept in the refrigerator for 2-3 days. If you would like to make them ahead of time, I would suggest making them the night before or the morning of that you plan on serving.

MAke these often for parties. If available I add a small leaf or two of ginger mint or a small wedge of kiwi fruit along with the blueberry. Gives an extra pop to the taste and presentation. Always gets raves. Just a suggestion.
