SAUSAGE – We use pork sausage for this recipe, either breakfast sausage or Italian sausage. Spicy Italian sausage would be delicious as well! Whichever type you decide on, just be sure it’s ground sausage.
CHEESE – Shred your own cheese from a block for this recipe, it will help bind and add moisture to the sausage balls. Pre-shredded cheese contains cellulose that blocks moisture, so your balls will be drier compared to using fresh cheese. Cheddar cheese is our first choice for this recipe, but you can also add in some parmesan or swap out the type of cheese you use entirely.
BISQUICK – You will need 2 cups of Bisquick. You can certainly cut down the amount of Bisquick used if you prefer, or if they are too dry then go ahead and add a bit more milk to your liking. We also have a homemade Bisquick recipe you can use if you want to make it on your own, it’s super easy!

- Preheat the oven to 350F.
- Mix all ingredients in a large mixing bowl or stand mixer with paddle attachment. Add milk as needed, only a Tablespoon at a time to help the meatballs take shape.
- Use a 1-1/2 Tablespoon scoop to measure out and form meatballs.
- Bake for 15-18 minutes on an unlined baking sheet.

Yes, these sausage balls freeze really well. I would recommend flash freezing them (uncooked but assembled) on a baking sheet for about an hour so they aren’t sticky. Then remove them from the baking sheet and place them in a large ziptop bag or air-tight container. Store in the freezer for 3-4 months.
To store leftover sausage balls, place them in an air-tight container kept in the refrigerator for up to 4 days. You can also prep these ahead of time and store them unbaked in the refrigerator for 2 days.

Sausage balls can be served alongside breakfast or as an appetizer fitted with toothpicks. Go ahead and experiment with the different flavors and seasonings you can use. You can split the recipe in half by using two mixing bowls and swapping out the type of cheese and seasonings.
