This Pink Mudslide adds fresh strawberries into the mix for a fruity take on a frozen cocktail classic. You can make this for your sweetie as a way of saying I love you on Valentine’s Day!
Why we love this recipe
This Valentine’s cocktail is a creamy, frozen cocktail perfect for serving alongside or as dessert. The cocktail starts off strong with a Kahlua and vodka-infused milkshake and finishes of Irish cream-spiked strawberry milkshake for a fun twist on enjoying strawberries & cream for Valentine’s Day.
One of my favorite drinks is a White Russian so when I discovered the Mudslide drink – which is essentially a White Russian with Bailey’s and ice cream added in – I was in cocktail heaven!
Ingredients to Make a Pink Mudslide
Cocktail Tips
- I lucked out and found a delicious Haagen-Dazs White Russian Ice Cream to replace the vanilla ice cream in this version, but you can use coffee ice cream, strawberry ice cream – really whatever type of ice cream you’d love in a creamy cocktail.
- If you want a slightly less strong drink, you can swap out Bailey’s Irish Cream for half & half or reduce all of the alcohol by half and add just enough coffee cream to blend. Either way, you’re guaranteed to be in for a frozen and tasty treat!
How to Make a Pink Mudslide
- Place the strawberries and Irish cream (or half & half) in a blender and puree until smooth.
- Pour into the bottom of your martini glass and rinse out the blender.
- Place the Kahlua, vodka and one scoop of ice cream in the blender and puree until it reaches the same smooth texture as the strawberry-cream mixture.
- Pour the vodka shake over the strawberry shake and top with an optional additional school of ice cream.
- Garnish with a strawberry and enjoy immediately.

The drink was really delicious but not so pretty. The Baileys, Strawberries mixture was a pretty pink, but the vodka, Kailua and ice cream mixture was brown not white!

I havne’t tried, but I’m sure you could. I would suggest thawing them on paper towels because they will lose a lot of liquid.

When you suggest “coffee cream” as a substitute for the Bailey’s, do you mean a liquid coffee creamer such as Coffee Mate, or half and half, or…?

My apologies! Half and half is the same as coffee cream. The original writer of this article is from Canada and I didn’t catch that. I’ve always ever used baileys when making it, so didn’t notice the substitution. I will correct the recipe.
