I remember the first time I ever tried chicken salad with red grapes in it. The thought repulsed me. Grapes in chicken salad?? Yuk! Nothing could be farther from the truth though. Anyone who has tried it will most likely agree with me (I haven’t met anyone yet that didn’t like the combo), and anyone who hasn’t tried it really needs to take the plunge.
I used to work in a large office, and whenever there was a birthday, everyone brought in food. My boss used to always bring her spinach dip (YUM!), another woman always brought different appetizers, there were tons of desserts, bagels, and other yummy munchies, and one day… chicken salad with grapes. Everyone told me that it was great. I was in my 20′s and hadn’t quite experienced too much yet, and definitely hadn’t tried this. but I did, and I’ve been a fan ever since.
I recently came across this recipe for Light Chicken Salad on Alicia’s Recipes
and decided to give it a go. I did make a couple of small tweaks to the recipe. You can try their version, or mine is listed below :)
Light Chicken Salad
adapted from Alicia’s Recipes
3/4 c. light mayonnaise
pinch of dried ginger
1/2 tsp. salt
3 c. cooked chicken (or 3 cans)
1 1/2 c. red seedless grapes, halved
1 c. sliced celery
1/3 c. sliced green onion
Combine mayonnaise, ginger and salt. Stir in chicken, grapes, celery, and green onion. Makes 5 1/2 cups. Serve on a lettuce leaf of sandwich buns.
