Every banana lover knows that having a variety of banana recipes in your arsenal is a must. These banana cookies are like nothing we’ve ever had before. The texture, the flavor, and oh my God the aroma while baking!
Why this recipe works
If you’re wondering why the title of the posts asks if Bill will share, let me tell you about that. Back in September, I asked newsletter subscribers if they had a favorite Christmas cookie they would be willing to share with me and the rest of you.
I received quite a few recipes (thank you all!) but these “Will Bill Share Cookies” from Martha in Tennessee were the absolute bomb! I baked quite a few cookies in September, but this recipe for banana cookies really stood out.
My kitchen smelled amazing, the flavor is perfect, and they are easy to make.
Martha loves to bake and told me why they were named Will Bill Share Cookies. She said “I asked my son what he wanted in a cookie. He gave me the ingredients and created this recipe. Bill still loves them to this day, and that was 13 years ago. In fact, he never wanted to share, so I would have to make them when he was out on the road driving his truck. So now the family jokes and says but will Bill share?”
She further joked that by allowing me to share the recipe with the rest of the world was probably the only way Bill would agree to share. I love it! Thank you Bill and Martha for an amazing recipe we will make over and over again!

How to Make Banana Cookies

- Preheat oven to 350 F. Line insulated baking sheets with parchment paper or silicone baking mats.
- Whisk together flour, baking soda, salt, nutmeg, cinnamon, and banana pudding mix powder. Set aside.
- Cream together sugar and shortening. Beat in both extracts, egg, and milk.
- Stir in the flour mixture.
- Stir in mashed bananas and oats.
- Stir in white chocolate chips and pecans.
- Use a cookie scoop to portion out cookie balls onto baking sheets, placing them an inch apart. If you don’t have a cookie scoop, measure out a heaping tablespoon for each cookie.
- Bake for 12-15 minutes or until lightly browned.
- Remove to cooling racks and allow to cool completely.
Frequently Asked Questions
These cookies can be kept in an airtight container at room temperature for 3 days. To keep longer, store in the refrigerator for a week. These cookies can also be frozen for up to 3 months.
Most cookie recipes do fine if you substitute butter for shortening. We have not experimented with butter for this particular recipe, but believe it should work without issue.
While these banana cookies call for quick oats, old fashioned oats can certainly be used instead.
These delicious banana cookies are among our favorites now. Full of chewy, sweet, spicy goodness, they are everything a banana lover could want in a dessert. Who knows, you may not want to share either!

- 1 cup mashed banana 2 medium bananas
- 1 ¾ cup quick oats old fashioned will work as well
- 12 ounce bag of white chocolate chips
- ½ cup chopped pecans
