How to Make Mexican Chicken Casserole

- Preheat oven to 350 F and grease a 13×9 casserole dish with non-stick cooking spray.
- Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
- Layer diced chicken and black beans over the crushed chips.
- Stir 1 teaspoon of cumin into the cream of chicken soup. DO NOT add any water or milk to the soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
- Sprinkle cheese evenly over the canned tomatoes and top with remaining crushed chips.
- Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
- Garnish casserole with cilantro and chopped tomatoes.
- Serve immediately with a slice or two of fresh jalapeño.

- 15 oz. black beans drained and rinsed
- 2 cups chopped cooked chicken (rotisserie chicken works well)
- 1 teaspoon ground cumin
- 21 oz. cream of chicken soup 2 (10.5 oz) cans, DO NOT add any water or milk
- 10 oz. can Rotel tomatoes undrained
- 2 cups shredded jack cheese
- 2 cups shredded medium cheddar cheese
- 1 tomato diced
- 1 bunch cilantro rinsed and chopped
- Jalapeños optional

Before You Begin
- Do not drain Rotel tomatoes before adding to casserole.
- You can substitute Doritos for regular tortilla chips.
- For another flavor element, mix a 4 oz. can of diced chiles into the soup/cumin mixture.

This turned out great and I will definitely be making it again. I took the advice of someone who commented and added frozen corn along with the black beans. I also added taco seasoning mix and a can of green chiles to the chicken soup and skipped the cumin. I found it took about 40 minutes – not 30 – to heat all the way through. I added a dollop of sour cream to each serving.

Love this recipe!
I’ve used refried beans when I didn’t have canned black beans, was also very good. I like to add fresh or canned corn with the bean layer. I dutch oven bake the chicken breasts with salt, pepper, and a cup of medium salsa for 45 mins @350 then pull it apart w 2 forks.
I cut back the amount of cheese the first time but that was a mistake, keep it cheesy 😋😁

This recipe was so good! Instead of the cumin, I mixed one pack of taco seasoning with the chicken soup. I also used Doritos! So yummy! Even the picky husband loved it.

WOW LOVE THIS RECIPE and SO GLAD I FOUND IT! I don’t ever think I will use flour-round tortillas again as using BAG CHIPS is soooooo much BETTER! I used SPICY CHILLIE DORITOS CHIPS AND TRADER JOES ROUND CORN CHIPS -both.
I added in a 16 0Z. can of GOYA brand Refried Beans with CHORIZO added this as well as 1/2 the black beans called for.
I used 2 large fresh chicken breasts meat chopped up in skillet (no oil no butter) and put 1/2 to 1 teaspoon of Chile Powder,
1/2 to 1 tsp. Cumin, 1 tsp. of Taco Season, and 1/2 tsp. of onion powder. And I added a little bit of Lime Juice and cooked it medium heat just enough not to overcook or dry out.
THIS RECIPE IS SO ABSOLUTELY DELICIOUS and I will recommend it highly. Thank you Amanda

I’m sorry 😞, I so wanted to like this recipe, but it was absolutely too much cumin! My family said that’s all they tasted, and I have to agree. The next time I make this, I’ll use half the amount, or I’ll eliminate it altogether and just use a tsp. of taco seasoning powder, since those typically have cumin and other Mexican inspired seasonings in them.
