Blueberry Vinaigrette Salad Dressing
Everyone knows that the strength of a salad lies in its dressing. Which is why it’s weird that for most of my life, I relied on the store-bought stuff to spruce up my greens. But then I moved to Europe where things just taste a little different, and I found myself craving some of the dressings I grew on in America.
So in the name of using our seasonal summer fruit to make a classic salad dressing, today we’re whipping up a simple and delicious Blueberry Vinaigrette Salad Dressing!

To make this Blueberry Vinaigrette Salad Dressing you’ll need:
- 1 cup fresh blueberries mashed
- ¼ cup balsamic vinegar
- 2 Tbsp honey
- 1 Tbsp lemon juice
- Pinch of salt and pepper
- ½ cup olive oil

I’ve made this salad dressing (and various versions of it) for years, but I always whisked the ingredients together by hand. The result is an easy dressing that eventually separates back into oil and vinegar layers. But on a whim, I broke out the Vitamix on a recent batch and blended together the ingredients. I have no other words but…whoa.
Blending together the blueberry vinaigrette produced a creamy, velvety dressing that kept its emulsion and made for a healthy alternative to cream-based dressings. So if you’re ready to kick your summer eating up a notch, give this Blueberry Vinaigrette Salad Dressing a go!

Blueberry Vinaigrette Salad Dressing

- 1 cup fresh blueberries mashed

Instructions
- In a blender, combine blueberries, vinegar, honey, lemon, salt, and pepper.
- With the blender running, slowly pour in oil, and continuing blending until completely emulsified and creamy, about 30 seconds.

This vinaigrette can be kept in the refrigerator for 2 weeks. Oil based dressing do not freeze well.
