Have you ever had avocado toast? It combines the traditional flavors of guacamole with toasty bread for a delicious, quick and easy open-faced breakfast sandwich. Keep it vegan or add a sunny side-up egg on top. It will quickly become one of your favorite breakfasts!
I’ve even tried my healthy guacamole on this and it’s great!
Avocado Toast Recipe
If you grew up in southern Mexico or Columbia, you’re probably wondering why there’s a written recipe for this. After all, mashed avocado on top of toast is not new to you.
This simple spread was often eaten in those countries and has been for many years. In the U.S., however, avocado toast has become quite the new food trend.
As more and more people learn about the health benefits to be gained from avocados, this fruit has soared in popularity. It’s a delicious source of good fat and a staple in vegan and low carb diets. This simple dish can be made in a variety of ways, but I’ll start by sharing the basic instructions. See the end of this post for recipe varieties!
Here are the ingredients
- Ripe avocado – be sure to check under the stem to determine the ripeness of an avocado.
- Fresh cilantro – I use herb scissors to chop all my fresh herbs.
- Lime juice – I don’t recommend bottle lime juice. Buy a medium lime, you’ll need the juice from half of it. You can also use lemon juice, but lime pairs better.
- Sea salt – Regular table salt is fine, but sea salt is better for you.
- Freshly ground black pepper – I haven’t bought “pepper dust” in a long time, I love it freshly ground and pepper grinders are inexpensive.
- Slices of bread – You can use whatever your favorite bread variety is for your toast! Though I do suggest a whole grain over basic white bread any day.
- Garlic clove – You won’t be chopping or mincing this, just cutting it in half.
- Olive oil or softened butter – Either one works, you can use avocado oil if you prefer!
- Red pepper flakes – These are definitely optional and add a little kick to your breakfast. Leave them off for a milder flavor.

How to Make Avocado Toast
- Cut the avocado in half, remove the pit, scoop the avocado from the skin, and place in a small bowl.
- Mash the avocado with a fork.
- Stir in the chopped cilantro and lime juice.
- Season with salt and black pepper.
- Toast the bread and rub each slice with the cut side of the garlic.
- Brush toast with oil or softened butter. Season with salt and pepper.
- Gently spread mashed avocado mixture evenly on each toast slice and season with more salt and pepper if desired.
- Sprinkle with red pepper flakes.
This humble breakfast is easy to make and a healthy way to start your day. Try this simplest of guacamoles on toasted bread, a pita, flatbread, or a tortilla. You can also top it with a fried egg or a pile of fluffy scrambled eggs.
Want a little more kick? Sprinkle your finished dish with a few dashes of hot sauce!
