If you have teenagers like I do, then all you have to do is mention the word “pizza” and they are all ears. There’s something strangely magical about pizza that attracts kids, especially the hungry teenage boy types. I decided to try something a little different and experimented on those boys. Luckily, the test was a success.
I think the only thing missing was dipping sauce. These were fabulous on their own, and a really great warm and hand held snack, but dipping sauce would have pushed them over the edge.
I wanted to try them first as a cheese-only type roll, but they would be great with some pepperoni or sausage, or any other pizza toppings you normally partake in.
I make my own pizza sauce (recipe here), so having extra for dipping does not present a problem. If you buy jar sauce, you should be fine too as the rolls themselves only need 1/2 cup.
These are great for after school, when friends come over, watching the game or just for hanging out. The best part is that you can teach them how to make these themselves, or make them ahead and having them waiting in the fridge, ready to pop in the oven!
These aren’t hard at all. Start with a can of refrigerated pizza dough. Spread it out and cover it with the pizza sauce.
Cover that with the Mozzarella cheese and then with the Parmesan cheese. Starting from the long end, roll up dough and wrap in parchment. Place in freezer for 15 minutes to chill.
Meanwhile, melt the butter in a small bowl. Remove dough log from freezer and slice into 1 1/2″ discs. Place in prepared pan, slice side up.
Brush tops with melted butter, then season lightly with garlic salt and sprinkle with Italian seasoning. Bake them and enjoy! (full instructions below)

- Meanwhile, melt the butter in a small bowl.

- Place in oven and bake 22-27 minutes. Rolls are done when crust is lightly browned and cheese and sauce are bubbly.

I made these for a meeting during COVID and wanted to have individual servings.
I baked the slices in cupcake papers in a cupcake pan. They browned nicely and everyone loved them. My husband saw a couple put some in a napkin for their kids. So they were a hit.

Being from NYC, pizza is one of my weaknesses. We had some friends from church over a couple of weeks ago. I made these, but a somewhat mini version, and served them as appetizers. The only thing different, besides smaller portions, I diced up some thin sliced pepperoni and sprinkled that on top of the cheese; then rolled them up, brushed them with olive oil then sprinkled them with seasoned salt and Italian herbs. Next time I’ll know to make bigger batches, especially with kids; you step on their feet and their mouths open.

Hi Gulls. I have never tried this with puff pastry. I would recommend comparing the baking temps and times on both a puff pastry box and the rolls and then go from there.

I made the pizza rolls this weekend and they were a disaster. they didn’t stay together. It was a big blob, but a very tasty blob. Next time I am going to bake it whole and then cool a few minutes and then cut into them.

I love the recipe, and will make it as soon as I can buy the ingredients. I like to add pepperoni or salami, even Italian Sausage. Can you give me an idea of how much dry sausage to get to cover the pizza decently. I guess I’d need to cook the Italian Sausage first as the roll-ups cook for only 22 minutes. Also, have you tried fresh or dried basil or oregano, or fresh spinach?

Yes I would brown and crumble the sausage first, then just sprinkle some on. I haven’t tried spinach or fresh basil but I’m sure it would be wonderful!

These look like the cinnamon rolls my mother used to make but with cheese and tomato sauce instead of cinnamon and sugar! I make pizza roll ups with fresh lasagna noodles or baked, thinly sliced eggplant. I lay them down to bake them.

Hi Marian. Any time I have frozen either pizza or rolls, you need to partially bake (parbake) them first. You bake them long enough that the soft dough forms an outer crust, but it doesn’t cook long enough to begin browning, or at least very little. So for these that would probably be around ten minutes or so. BUT be sure to watch them as I am just guessing based on prior experience with other recipes! Then let them cool, wrap in foil or keep in the pan and wrap, and freeze. Generally to reheat, use the same temp and timing and place them in the oven frozen.
