How can you say no to pizza for breakfast? It’s sort of like a breakfast casserole, but instead of baking in a casserole dish, you’re adding flaky crescent dough for a base that can be baked straight on a sheet pan. So get ready to say goodbye to store-bought breakfast pizzas.

CRUST – There’s nothing easier than canned crescent rolls, and they fit hand in hand with breakfast food. However, you can make your own dough if you prefer. You can also use Pillsbury pizza dough.
TOPPINGS – Breakfast sausage and bacon are the two proteins used. If you’d like, you can use precooked bacon that you can find at your grocery store, or substitute it with turkey bacon. Feel free to add chopped ham! For the sauce, you’ll be making a sausage gravy in a skillet, it’s super simple to make. Of course, you can’t forget the eggs. As one of the main stars of this breakfast pizza, you’ll need 12 eggs. Last but not least, cheese. We chose Colby Jack, but cheddar and Monterey will work as well.
How to Make Sheet Pan Breakfast Pizza

- Preheat the oven to 350 degrees. Spray a half sheet pan with cooking spray.
- Roll out the 2 cans of crescent rolls and spread into the pan pinching the seams together.
- Bake for about 12 minutes until the crust is lightly brown. Remove from the oven and set aside.
- In a large frying pan over medium high, brown up and crumble the sausage. Do not drain the grease.
- Add the flour to the sausage and stir together until the flour is no longer visible.
- Next stir in the milk and whisk over medium high heat until it bubbles and begins to thicken. Season with salt and pepper to taste. Remove from heat.
- In a large skillet over medium low heat melt the butter and pour in your beaten eggs. Season with salt pepper and half a tablespoon of chives. Stir gently and cook until they just come together.
- To assemble the pizza, first spread the sausage gravy all over the crescent roll crust.
- Then spread the eggs over that.
- Now add your cheese.
- Next add your cooked chopped bacon.
- Bake again for 5 minutes until the cheese is melted.
- Top with remaining chives. Serve!

I don’t precook my eggs. We pour the scrambled eggs over the toppings and they cook up great. I also don’t precook the crescent sheet roll first. It all cooks fine without having to precook anything except the meat.

Store didn’t have crescent roll dough but, Jackpot! Found pizza dough! I only had a toaster oven with small pans so made 2 pizzas. 1 for hubby, 1 for me.
