Attention guys and gals who love effortless cooking. Check out my new favorite way to make absolute magic happen with chicken, fresh broccoli, and white rice in one skillet. Just like this Bacon Cheeseburger Pasta, homemade doesn’t get any easier than this one-pan skillet chicken broccoli and rice!
One Skillet Chicken Broccoli and Rice
Do you have enough 30-ish minute meals in your busy, weeknight rotation? Even if you do, you’ll want to add this number to the pack. It’s just…it’s just…soooo damn good! It’s creamy, yet light. Fills you up, yet doesn’t weigh you down.
For this skillet chicken dish, you simply saute the onions and garlic, toast and steam the rice in whole milk, add cooked chicken, broccoli, and seasonings…all in one skillet. Just wait till you taste the results. The leftovers are just as good too!

You will need the following ingredients for this recipe
- 2 tablespoons olive oil
- 1/2 cup onion (1 small onion diced)
- 2 garlic cloves (finely grated)
- 1 cup white long grain rice (rinsed and drained)
- 1 1/4 cups whole milk
- 1 1/4 cups chicken broth
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 cups fresh broccoli (bite-sized pieces)
- 1 cup cooked chicken (shredded)
- 1/2 lemon (for serving)
- 1 tablespoon fresh parsley (chopped)
Kitchen tools I use for this recipe:
- chef’s knife
- cutting board
- Microplane fine grater (to grate garlic)
- colander (to rinse/drain rice)
- 5-quart nonstick skillet with lid (pictured here is a Tfal)
- silicone spatula or wooden spoon
I surprised my hungry guy with this delish dish the other day and he was a super deeee-uper, happy camper. I felt like such a rockstar…mainly because it was so stinkin easy! That all sounds totally corny, but I’m not pulling any legs here. This dish is so simple and delish, I’m all like why I didn’t come up with it sooner?!?!

- 2 tablespoons olive oil
- ½ cup onion 1 small onion diced
- 2 cloves garlic finely grated
- 1 cup white long grain rice rinsed and drained
- 1 ¼ cups whole milk
- 1 ¼ cups chicken broth
- ½ teaspoon salt

- 2 cups fresh broccoli bite-sized pieces
- 1 cup cooked chicken shredded
- ½ large lemon for serving
- 1 tablespoon fresh parsley chopped
Before You Begin
Instructions
- Prep all recipe ingredients (chop, dice, etc).
- In a large, nonstick skillet on medium flame, heat OLIVE OIL until shimmering (about 2 min).
- Add onion and garlic; saute until tender and fragrant (about 3 min).
- Add white rice; continue heating until moisture is removed and rice becomes fragrant and lightly toasted, stirring as needed (about 3 min).
- Add milk, chicken broth, salt, and pepper; stir to combine; adjust flame to HIGH to achieve a gentle boil (takes about 3 minutes).
- Cover skillet, turn flame to medium-low, and allow to simmer for 10 minutes.
- Add broccoli and chicken (but DON’T stir into rice yet - just place them on top of the rice); cover and simmer 10 more minutes.
- Remove lid, toss everything together; squeeze fresh LEMON over entire surface; top with parsley; serve warm.

Never cooked rice in milk and was skeptical about result. Tried the recipe because I had leftover chicken and a lot of broccoli. Glad I did because it was excellent. my cooking time for each stage was slightly longer about 15 minutes instead of 10. Used a bit more lemon juice than the recipe calls for and a sprinkle of good Parmesan.
If you’re not a big fan of broccoli you could probably substitute another vegetable such as squash or spinach
Overall one of the best recipes for leftover check I’ve ever found -excellent!
