These Stuffed Pepper Meal Prep Boxes are full of flavor while being so easy to prepare. Lunch for the week is taken care of!
Stuffed Pepper Meal Prep Boxes
I’ve always liked the idea of meal prep, but it always seemed like such a labor-intensive way to spend a Sunday afternoon. But then I realized that I am, in fact, a food blogger who could probably figure out a solution if I put my mind to it.
So I did, and these Tex-Mex inspired Stuffed Pepper Meal Prep Boxes were the result! They have quinoa stuffed peppers (which basically taste like an enchilada stuffed into a pepper). And we’re pairing that with a fresh take on a bean salad that’s been “famous” in my family for years!
These Stuffed Pepper Meal Prep Boxes have two major components: the stuffed peppers and the bean salad. Get the stuffed peppers going first. These take a bit longer and require a quick bake in the oven.
While those bake, throw together your bean salad. Then just portion everything into meal prep containers for the week and store in your fridge until ready to eat! I love packing mine with some tortilla chips, sour cream (or plain Greek yogurt), and avocado drizzled with lime (the lime helps to prevent browning). (Hungry for more meal prep recipes?
