A healthy, light, and easy salmon salad recipe loaded with omega-rich salmon, colorful veggies, avocado, feta, and zesty vinaigrette. Great for low-carb meal prepping!

Why this recipe works
Honestly, what’s not to love about salmon salad? We’re talking 14g of protein, omega-3 fatty acids, healthy fats… you’ve got it all here. Oh, and she’s low carb too!
This salmon salad has the perfect mix of texture and flavor. Crisp red onion, cucumber, tomatoes, Kalamata olives, and creamy sliced avocado tossed with tangy feta and vinaigrette… and you of course can’t forget the flakey hunks of salmon that tie the salad together.

Ingredient Info and Substitution Suggestions
SALMON – Leftover salmon is excellent in this recipe, but you can just as easily cook up a filet or two to make it as well. You’ll need about 4 ounces of salmon to yield the 3/4 cup called for in the ingredients. We can show you how to make poached salmon, grilled salmon, and pan seared salmon if you don’t have any leftovers to use up.
LETTUCE – We used a mixture of butter lettuce and romaine lettuce. You can use whatever lettuce or mixed greens you prefer.
DRESSING – Salad dressing comes down to personal preference, therefore, a store-bought vinaigrette is perfectly fine here. It’s also fantastic with homemade balsamic vinaigrette or lemon salad dressing for a citrus twist.

Frequently Asked Questions & Expert Tips
If you make salmon salad and plan on having leftovers(or if you are prepping it ahead of time), I would suggest keeping the salmon separate if possible. That way the salmon doesn’t overpower the surrounding ingredients after being refrigerated. Store in the refrigerator for up to 3 days.
Though I would say this salad is superior with fresh salmon, you can absolutely use canned salmon if preferred.

Serving Suggestions
Serve salmon salad chilled for lunch or dinner. This is a great option for meal prepping lunches throughout the week if you double or triple the recipe. Simply store the salmon and dressing separately from the other ingredients in the fridge and toss when ready to enjoy!
