How to Make Mexican Chicken Casserole

- Preheat oven to 350 F and grease a 13×9 casserole dish with non-stick cooking spray.
- Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
- Layer diced chicken and black beans over the crushed chips.
- Stir 1 teaspoon of cumin into the cream of chicken soup. DO NOT add any water or milk to the soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
- Sprinkle cheese evenly over the canned tomatoes and top with remaining crushed chips.
- Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
- Garnish casserole with cilantro and chopped tomatoes.
- Serve immediately with a slice or two of fresh jalapeño.

- 15 oz. black beans drained and rinsed

- 21 oz. cream of chicken soup 2 (10.5 oz) cans, DO NOT add any water or milk
- 10 oz. can Rotel tomatoes undrained
- 2 cups shredded jack cheese
- 2 cups shredded medium cheddar cheese
- 1 tomato diced
- 1 bunch cilantro rinsed and chopped
- Jalapeños optional

Before You Begin
- Do not drain Rotel tomatoes before adding to casserole.
- You can substitute Doritos for regular tortilla chips.

So good! The only change I would recommend is less tomato. I only had 5 cans in my pantry, which was still only half of the 110 oz in the recipe.

Thanks for pointing that out. I am assuming that you were making fun and didn’t really use that many cans! I can see how it may have looked like that because the space between the numbers isn’t really big. I removed the “1” from the ingredient list.

This was delicious and so easy! I used cream of onion instead of cream of chicken and added corn and olives. I’m a vegetarian but my husband and toddler aren’t so I put chicken only on half. Next time I’ll add green onion to the casserole and add some thinly sliced jalapeño on top!

Seems very bland. Would be better with more spices and seasonings. Also a jar of salsa maybe better than a can of tomatoes

Usually my families various tastebuds require at least two or three different dinners options to make everyone happy. This was great hit and everyone liked it! I did tweak the recipe a little by adding some enchilada sauce, corn, spinach, a sautéed onion, and some taco mix on pulled rotisserie chicken. I plan to make this agin! Thank you

I added can of corn drained. I’d prob add black olives and jalapeños next time. Also only had 1 can of cream of chicken so I added a can of cream of celery.

I have a question…I’m going to prepare this for our youth group. I’m scaling it up to feed about 50. Can you tell me what size bag of Doritos you used for the single recipe? I would say one small bag (10 oz. bag) will give you about 3 cups of chips once they’re crushed.

Yay! This is a keeper. All I had was ground turkey, but it turned out great! I give it a high grade for yumminess AND for how easyit is to make. There are a lot of things you could to this to just be creative with it, but it terrific just the way it is. The tomatoes are a good idea and sour cream would be amazing. I can see how corn would be perfect in it…..I served it with a big green salad. Thank you for sharing with us!
