I’m a sucker for fudge brownies as is, but adding a little extra something special on top is my weakness hence these chocolate cheesecake brownies and peanut butter frosted brownies. But now it’s time to let the mint chocolate combo shine!

BROWNIE – This homemade brownie batter is made with unsalted butter, semi-sweet chocolate chips, eggs, unsweetened dutch cocoa powder, sugar, vanilla extract, and flour. Please be sure to properly measure your flour as this will affect the consistency of your brownies. Fudgey brownies are made with properly aerated and scooped flour, if you add too much flour they become cake-like. You can swap out the homemade recipe with a box mix if you’d like to save some time.
GANACHE – It doesn’t get easier than this simple chocolate ganache using semi-sweet chocolate chips and butter. You may sub out the sem-sweet chips with dark chocolate if preferred.
MINT – Using butter, cream cheese, heavy whipping cream, mint extract, and a small amount of green food coloring will give you the creamiest, dreamiest mint layer you can imagine! Start with just one drop of green food coloring, adding more to your liking – or simply omit the food coloring and leave the frosting as is.
How to Make Chocolate Mint Brownies

- Preheat the oven to 350F and line the baking pan (8×8 or 9×9) with parchment paper. Allow parchment paper to hang over the edge as handles for later use.
- In a bowl, melt together the semi-sweet chocolate chips and the butter in the microwave in 15 second increments. Stirring with a spoon between each time. This should not take longer than 1 minute. Allow the chocolate to cool slightly before adding other ingredients.
- To a large mixing bowl add the melted chocolate, eggs, cocoa powder, sugar, and mint extract. Mix until well combined.
- Add the flower and mix until incorporated.
- Pour into the pan and bake for 30 minutes. Remove from oven and allow to fully cool right in the pan for about an hour.
- In a mixing bowl using a hand mixer, beat the butter, cream cheese, heavy whipping cream, food coloring, and mint extract until combined.
- Add the powdered sugar and mix again with the hand mixer until smooth and frosting like in consistency.
- Spread the mint mixture using an offset spatula onto the cooled brownies.
- In a mixing bowl microwave the chocolate and butter in the same manner as with the brownies. Once a ganache has formed, allow to cool slightly. Then pour onto the mint topping and spread evenly with an offset spatula.
- Refrigerate until set, about an hour.

The mint extract is what makes these brownies mint chocolate. If you’d like, you can omit the mint altogether or sub it out with raspberry extract, peppermint extract, or cherry extract and replace the green food coloring with red or pink.
