Fruity berry blue jello spiked with tropical coconut rum, pineapple juice, and blue Curacao makes these blue Hawaiian jello shots the best boozy summer treat!

Why this recipe works
Blue curacao and berry blue gelatin give these blue Hawaiian jello shots their ocean-esque color. Add a splash of tropical flavor with pineapple juice and coconut rum for a sweet and fruity aftertaste with a bite.
You only need 5 ingredients to make these boozy little bombs, and that’s if you’re including water in the list. You can make them ahead of time and bring them to pool parties, cookouts, lake days, or really, any summer event you have planned. Top with whipped cream, pineapple wedges, and a maraschino cherry. Bring a batch of these and my layered 4th of July jello shots to your patriotic celebrations, if you want to have a good time that is!

Ingredient Info and Substitution Suggestions
JELLO – Berry blue jello is the foundation of this recipe and the main source of that pretty ocean blue color.
LIQUOR – You will need coconut rum and blue curacao to make these tropical jello shots. The blue curacao is what gives them that bright blue color, along with the berry blue jello. Malibu is our coconut rum of choice, but feel free to use your favorite brand.

Frequently Asked Questions & Expert Tips
Yes, absolutely! You can prepare them up to 2 days in advance, though I would suggest holding off on the whipped cream, cherries, and pineapple garnishes until you are ready to serve them. Otherwise, the whipped cream falls flat fairly quickly.
Yes, you can make a non-alcoholic version and still keep the tropical flavor by substituting the alcohol with coconut water.
I would not recommend freezing your blue Hawaiian jello shots as their texture does not hold up well once thawed.
Leftover jello shots are best within 2-3 days but will keep well for up to 5 days if stored, covered, in the refrigerator.

Serving Suggestions
Serve your blue Hawaiian jello shots chilled with or without a garnish of whipped cream, pineapple wedges, and a maraschino cherry.
If you plan on taking these to a party, they’re best made in plastic cups that come with a lid. Otherwise, they work great in regular shot glasses as well!
