This delicious recipe for beef brisket is slow-baked in the oven and creates its own tasty tomato based gravy. It’s perfect for cool fall nights and makes a wonderful Sunday supper dish.

Beef Brisket & Gravy
I’ve had a recipe binder for almost 30 years. There are probably twenty different recipes for preparing brisket, all of which I have yet to try. While a smoked brisket is truly amazing, I don’t have a smoker (yet) and using liquid smoke feels like cheating.
I’ve made brisket in the crockpot as well as another oven brisket recipe that has more of a beef broth and gravy base. They are both wonderful, but my tomato based beef brisket is my favorite.
My go-to beef brisket recipe is one that I found on a message board back in 1998. Yes, the Internet has been around that long! It’s simple. It’s delicious. It makes its own gravy.
Ingredients needed for this beef brisket recipe:
The ingredient list is small, but the baking time is long. I usually don’t make this until the weather cools off because it needs four hours in the oven. The result is a tender meal that everyone loves.
- 3 lb. beef brisket
- 15-oz can diced tomatoes
- 2 cups water
- 1 envelope onion soup mix
- 6 Ginger Snap cookies

This recipe couldn’t be easier. You simply put the brisket into the pan, then run the remaining ingredients through a blender. Pour that mixture over the brisket and cover the pan tightly with foil. You do need a total of four hours in the oven, so make sure you plan ahead for this one.
Side dishes for beef brisket
I’m partial to mashed potatoes myself, especially since there’s plenty of gravy to serve with this dish! This blog has plenty of other side dish recipes, but here are some of my mashed favorites:
- Creamy Traditional Mashed Potatoes – these potatoes are made on the stovetop, the traditional way.
- Crockpot Mashed Potatoes – this would actually be a great choice for this meal because they take just a little longer to cook than the brisket!
- Brown Butter Mashed Potatoes – browning your butter brings out a nuttiness that is delicious!
- Mashed Cauliflower – these are a great option if you’re cutting back on your potato consumption.
I like to pair a mashed potato recipe with this pan-roasted broccoli or these balsamic carrots, depending on the occasion. But to make the meal a bit easier, I’ll just steam some frozen mixed vegetables.

- 3 lb. beef brisket
- 15 oz diced tomatoes canned, undrained
- 2 cups water
- 1 envelope onion soup mix
- 6 Ginger Snap cookies
Instructions
- Preheat oven to 325 F.
- Place brisket in a 13x9 baking dish.
- Place remaining ingredients into a blender and blend until well combined.
- Pour contents of blender over the brisket.
- Cover pan tightly with foil and bake in preheated oven for 3 hours, no peeking.
- Reduce oven temperature to 225 F.
- Remove brisket from pan and slice against the grain. Place the slices back into the gravy in the pan and seal with foil again.
- Bake one more hour.

Onion soup mix contains – Onions (Dehydrated), Salt, Corn Starch, Onion Powder, Sugar, Soy Sauce (Fermented Soybeans, Wheat and Salt), Caramel Color (Sulfites), Maltodextrin, Corn Syrup (Dehydrated), Yeast Extract, High Oleic Sunflower Oil, Disodium Guanylate, Disodium Inosinate.So if any of those ingredients are an issue you may want to check the health food aisle for a gluten free version. Alternatively, there’s a homemade version here https://www.allrecipes.com/recipe/217155/dry-onion-soup-mix/ As for the ginger snap cookies, there are gluten free ginger snaps available on the market. Ask at your local grocer.

Why do you use ginger snaps, they are my least favorite….any substitute or do they not have the flavor once the brisket is done.
