ASPARAGUS – When choosing asparagus for this recipe, look for thick spears that are all roughly the same size for even cooking. The thinner spears will not hold up well and should be reserved for a different method of cooking such as our Asparagus Pasta or Asparagus Risotto. You’ll want to let your asparagus come to room temperature (if they were refrigerated) before beginning.
