Take it a step further and use Irish coffee as your base. The chocolate ice cream makes your coffee extra creamy and divine, plus, you don’t have to worry about running out of ice for your cocktails when you’ve got ice cream on hand.
This boozy ice cream coffee float makes a nice dessert cocktail, something you can enjoy that isn’t too heavy after a meal. It’s smooth, decadent, and rich. Brew up some coffee, add the chocolate ice cream and a generous splash of Irish cream, and relax. I love making one or two on St. Patrick’s Day!

LIQUEUR – Baileys Irish Cream is a must, for obvious reasons! It’s the backbone of this recipe, and includes additional flavors (vanilla and chocolate) which makes it stand out. If for some reason you can not find it in stores, you can substitute with another Irish cream or even Kahlua.
ICE CREAM – You’ll want to use a good-quality chocolate ice cream, which will help enhance the flavor of the coffee greatly. If you want, you can use vanilla ice cream.
COFFEE – Use your favorite. You can substitute with decaf if preferred.
GARNISH – Chocolate syrup, sprinkles, whipped cream, and maraschino cherries are great little toppers, but are optional. This cocktail is great all on its own as well!

- Brew 2 cups of strong coffee using your preferred method.
- Measure out 3 ounces of Bailey’s into each mug.

- Place 2 scoops of chocolate ice cream into each mug and pour 1 cup of coffee overtop.

- Garnish as desired and serve immediately.

For a non alcoholic version, try substituting the Baileys with a flavored coffee creamer instead. I think it’d be great with either a chocolate or vanilla creamer. You can also try mixing heavy cream with a dash of vanilla extract.
