Any time you put the words “fudge” and “peanut butter” together, only good things can come of it. Toss the word “brownies” in there and it’s certain to be a winner! It didn’t take very long for this plate of brownies to disappear, and the peanut butter frosting was a big hit.

These would be great for taking along to someone’s house, perfect for the holidays. However, I would suggest wrapping the brownies in foil and packing the frosting into a plastic container with a lid. When you arrive, you can frost them right there, much to the delight of your hostess I’m sure. This way you’ll avoid the foil or container sticking to your frosted brownies making a big mess. Just don’t forget to take your pan home with you. Empty. Of course.

These brownies are nice and fudgy and the frosting keeps you from eating too many. *wink* Just rich enough to make you aware of when you say enough (for now).

On an unrelated note, I’m sad to see summer winding down this year. Usually by now I’m ready for fall, but this year has been so mild and last winter seemed to last forever, that I’m just not ready for fall. It’s my favorite season, always has been (and I’m sure I’ll be blowing up Instagram with fall photos soon enough) but I’m still not ready for summer to end. The pictures above are from my recent Instagram post here on this blog. I’ll have another one at the end of this month. And now a test to see if you are really reading this post ;-) I’m going to be starting another blog in the coming months that will focus on recipes that come from the Midwest. Start off by melting the butter and chocolate in a large bowl in the microwave for 1 minute. Stir, continue heating at 20 second intervals until chocolate is completed melted and smooth. Allow to cool.

Add sugar to the chocolate and stir until combined.

Add eggs and beat with wooden spoon or rubber spatula until combined. Stir in vanilla.

Stir in the flour and baking soda just until combined.

Spread the batter into the prepared pan and bake for 30 minutes.

Allow to cool completely in the pan on a wire rack.

Frost the brownies while still in the pan. Remove brownies from pan by lifting the sides of the parchment and place on a cutting board.

Cut into bars.

Ingredients
Brownies:
  • ½ cup unsalted butter
  • 3 ounces unsweetened chocolate, coarsely chopped
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ⅔ cup unbleached all purpose flour
  • ¼ teaspoon baking soda
Frosting:
  • 2.5 ounces cream cheese, at room temperature
  • 2 tablespoons (4 ounces) unsalted butter, at room temperature
  • 1¼ cups confectioners’ sugar, sifted
  • 3 tablespoons smooth peanut butter
Instructions
  1. Melt butter and chocolate in a large bowl in the microwave for 1 minute. Stir, continue heating at 20 second intervals until chocolate is completed melted and smooth. Allow to cool.
  2. Preheat oven to 350 F and line an 8x8 baking pan with parchment paper, allowing parchment to hang over the sides.
  3. Add sugar to the chocolate and stir until combined. Add eggs and beat with wooden spoon or rubber spatula until combined. Stir in vanilla. Stir in the flour and baking soda just until combined.
  4. Spread the batter into the prepared pan and bake for 30 minutes. Allow to cool completely in the pan on a wire rack.
Prepare the Frosting
  1. Combine butter and cream cheese in a medium mixer bowl and beat until creamy. Gradually add the powdered sugar a cup at a time, mixing thoroughly after each addition. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes. Add the peanut butter and beat until thoroughly blended.
  2. Frost the brownies while still in the pan. Remove brownies from pan by lifting the sides of the parchment and place on a cutting board. Cut into bars.

    How much peanut butter is in the frosting? Is it just 3 Tablespoons or maybe 1/3 cup? The recipe says 3 tablespoon cup so I wanted to ask. Thanks!

    The brownies not only look fantastic, they ARE fantastic. My peanut butter loving husband was thrilled with them.
    On another note, I really like that plate you use to show them. It looks a lot like the china my grandmother used to have.

I made these for a get together this past weekend with friends. Half of them were gone before the hot dogs made it off the grill. The rest was gone shortly after that. I hid one in the microwave so I did have a taste and they were – AMAZING. Jeremy told his buddies at work about them and now I “must” make them so he can take some to work. I will heed my own advice and make two batches so I can keep some at home! You CAN NOT go wrong with these. Mine even sunk for some reason so the edges were really crunchy….no one complained.
