These crunchy no bake cornflake cookies are made up of 2 simple ingredients and are so easy to make!
Why this recipe works
These addicting cookies are made with crunchy cornflakes and smooth chocolate. No bake cornflake cookies are the perfect chocolate-covered treat to bring to get-togethers or holiday gatherings and are easy enough for kids to join in on the fun.
Taking cereal and morphing it into a dessert is something we love to do. So adding these cornflake cookies to our collection along with our funfetti marshmallow cereal bars and muddy buddies was a no-brainer.

CORNFLAKES – We opted to use regular, plain cornflakes although frosted cornflakes will likely work as well, but may be sweeter due to the sugar coating.
CHOCOLATE – Either baking chocolate or chocolate chips can be used for this recipe. You can use dark chocolate, semi-sweet, milk chocolate, or white chocolate.
How to Make No Bake Cornflake Cookies

- Cover one large or two smaller baking sheets with parchment or wax paper.
- Melt the chocolate in a stainless steel bowl or double boiler over a pot of simmering water. Be sure to stir the chocolate occasionally to avoid scorching your chocolate.
- When chocolate is completely melted, take off heat and stir.
VERY IMPORTANT: Make sure you let it cool off a little before you pour it over the cornflakes so the cereal does not get soggy. - Pour melted chocolate over corn flakes and carefully stir with a rubber spatula until everything is coated.
- Use a tablespoon to make little heaps on the baking sheet until you have used up all the mixture. (If you want to make them smaller, you can use a teaspoon instead.)
- If adding any additional toppings, add them now before chilling.
- Chill in the fridge for about 30 minutes to set up.

You can use either chocolate chips or baking chocolate (normally comes in bar form). White chocolate, dark chocolate, semi-sweet, or milk chocolate can be used to make cornflake cookies. We prefer using chopped up baking chocolate as the consistency is easier to work with and the flavor is richer.
We have not tried freezing these cornflake cookies, but I would imagine they may thaw and become more chewy rather than crunchy. If you do decide to freeze these cookies, I’d advise placing them in a freezer safe container with parchment paper dividing the layers.
No bake cornflake cookies can be stored in an airtight container kept at room temperature or in a cool dry place for up to 4 days, or in the refrigerator for 1 week.
To add flavor an texture, try adding chopped nuts like pistachios, almonds, and cashews or top them with sea salt, edible flowers, or sprinkles.
