Lemon asparagus is roasted with butter and bright citrus juice then sprinkled with parmesan cheese for a quick and easy side dish bursting with flavor.

Why this recipe works
I love the zingy pop of freshness in this lemon asparagus recipe. A quick sprinkle of lemon pepper and garlic salt along with pats of butter, parmesan cheese, and lemon juice adds just the right amount of flavor to tender asparagus spears. Honestly, roasted lemon asparagus is probably one of my favorite sides to pair with bacon wrapped filet mignon or grilled salmon, but they go well with so many dishes!

Ingredient Info and Substitution Suggestions
ASPARAGUS – The easiest way to trim the woody ends of asparagus off is to hold it with both hands. Position one hand in the center of the stalk, and the other at the woody end. Bend the stalk until it snaps. You can do this with all your asparagus spears or simply use a knife to cut the rest using the first one you snapped as a reference for where to slice.
LEMON – You’ll only need 1 large lemon for this recipe. Half of it will be used for its juices and the other half is sliced and garnished on top before roasting.

Frequently Asked Questions & Expert Tips
Store any cooled leftovers in an air-tight container kept in the refrigerator for up to 3 days.
You can reheat the cooked lemon asparagus in the microwave, oven, air fryer, or in a skillet. Cooked asparagus tends to get mushy when stored in the refrigerator. To help revive them I like to reheat them in a 350F oven or pop them in the air fryer using the reheat function. You can also toss them in a skillet with a little olive oil to help them crisp back up. To reheat in the microwave, warm them in 15-second intervals until heated through. However, this method isn’t always the best for reviving your leftover asparagus.

Serving Suggestions
Lemon asparagus is a stunner of an addition to loads of different meals. Beef, chicken, pork, and fried tofu pair really well alongside them. If you like a little bit of spice, sprinkle them with some red pepper flakes before serving. Enjoy!
