Frankenstein rice krispie treats are an easy kid-friendly Halloween-themed dessert. Who knew green monsters were soft, chewy, and oh so adorable!

If you’ve seen our Halloween food ideas post, you’d know that we’ve made cute little pumpkins out of rice krispies in the past, but making adorable little Frankenstein rice krispie treats is a fun way for kids to get involved in the baking whether it be as a classroom treat, bake sale, or a fun Halloween party dessert.
Made like a traditional rice krispie treat, these vibrant green monsters have a little spooky flair to them perfect for an afternoon spent at home baking or for impressing party guests with your creativity.

Ingredient Info and Substitution Suggestions
RICE KRISPIES – Mini marshmallows, rice krispie cereal, vanilla extract, salt, unsalted butter, and green gel food coloring are what you’ll need to make these Frankenstein treats. You can certainly use off-brand rice krispies style cereal if desired. We highly recommend using green gel food coloring over the liquid kind as the gel food coloring will produce a more vibrant colored krispie treat.
DECORATION – Mini marshmallows, edible silver glitter spray, black candy melts, candy eyeballs, and black decorating frosting are used to decorate the face. You can omit the glitter spray if desired, it’s only used to add shine to the marshmallow “ears”. Instead of mini marshmallows, feel free to substitute with pretzel sticks.
How to Make Frankenstein Rice Krispie Treats

- Line an 8 by 8-inch baking dish with 2 pieces of parchment paper so that it hangs over all 4 sides. Lightly spray the paper with coconut oil spray.
- Melt the butter in a medium saucepan over medium heat. Turn the heat down to low, stir in the mini marshmallows, and cook (stirring continuously) until they’re almost but not quite fully melted. This should take about 30 seconds.
- Remove the saucepan from the heat and stir in the vanilla, salt, and green gel food coloring. Stir in the rice krispies cereal until well-coated.
- Pour the cereal into the prepared pan and use a thin metal spatula that’s sprayed with coconut oil to spread it out in an even layer.
- Cool completely and then cut into 6 equal pieces.
- To decorate, lightly spray the mini marshmallows with edible silver glitter spray.
- Melt the black candy melts in a double-boiler or in a microwave-safe bowl in the microwave.
- Dip the top inch or so of each rice krispie treat in the melted black candy and place each on a parchment-lined baking tray to set.
- Use the black frosting as glue to stick 2 eyes on each face.
- Draw a mouth on each face with the black frosting.
- Again use the black frosting as glue, this time to stick 1 mini marshmallows on each side the faces.
- Let the frosting set and then serve.
Frequently Asked Questions & Expert Tips
To keep these rice krispie treats soft and chewy, be sure to store them in an air-tight container in a cool place. They should stay soft for around 2-3 days when properly stored, but if you plan on making them ahead of time, do so one day in advance.
Serving Suggestions
It goes without saying that these Frankenstein rice krispie treats are great to make for Halloween parties, bake sales, or even to add to your You’ve Been Booed basket. Serve them as a midday snack or for dessert. Wrap them in cellophane baggies tied with a Halloween ribbon for gift giving!
