Ingredient Info and Substitution Suggestions
STEAK – Thinly sliced bottom round steak is what we reached for in this recipe. You can use any kind of meat you’d like here, ribeye, flank steak, and roast beef work as well.
CHEESE – Cream cheese, provolone cheese, and parmesan cheese give this dip a creamy consistency (along with the sour cream). We suggest using blocks of cheese instead of pre-shredded as pre-shredded cheese contains preservatives that can actually make your dip not as melty and more gritty.
VEGETABLES – Red bell pepper, onion, and garlic complement this dip so well. Feel free to add in any extra veggies like pepperoncini, green bell pepper, or mushroom.
DIPPING IDEAS – Corn chips, crackers, sliced baguette, bell pepper slices, celery, mini bagels, and pita are all great options.

- Preheat the oven to 425F.
- Dice the onion, bell pepper, and garlic. Chop the steak into small pieces. Grate your parmesan and provolone cheese.
- Heat the butter in a large cast-iron skillet over high heat. Once hot, add the bell pepper and onion and cook until softened, about 2 to 3 minutes, stirring frequently.
- Add the steak and cook until browned, about 4 to 5 minutes, stirring frequently.
- Turn the heat down to medium-low. Add the garlic and cook for 1 minute, stirring constantly.
- Add the cream cheese, sour cream, milk, cayenne pepper, black pepper, and salt. Cook until the sauce is smooth and creamy, stirring constantly. Remove from the heat.
- Stir in 3/4 of the shredded Provolone and 3/4 of the grated Parmesan, reserving 1/4 of each for topping.
- Spread the mixture evenly in the skillet and top with the remaining Provolone and Parmesan.
- Bake (uncovered) until the dip is hot throughout and the cheese is melted and starting to turn golden, about 15 minutes. Sprinkle the parsley on top.
- Serve warm with anything you like for dipping.

There are so many ideas for dippers but we love corn chips, crackers, sliced baguette, bell pepper slices, celery, mini bagels, and pita slices. Go all out and offer your guests a selection!
Traditionally ribeye is used for Philly cheesesteak sandwiches and also works well in this dip. However, in this recipe, we are using thinly sliced round bottom steak. You can use whatever kind of steak you prefer, some other ideas include flank steak or even roast beef.
You can cook this Philly cheesesteak dip in the slow cooker on low for 7 hours. Check your dip at the 6 hour mark, if the meat isn’t fully cooked, continue for another hour. If you’re worried about the meat not being done in time you can sear the meat in a skillet before adding to the slow cooker. Additionally, you can swap it out for deli sliced roast beef and cook on low for 5-6 hours.
Steak, peppers, onions, and melty cheese come together to make this bubbly Philly cheesesteak dip. Serve with chips, sliced bread, or veggies for an appetizer everyone will love!

Thoughts on making this ahead of time and just warming it up? I want to bring this to a tailgate.

I’m sure it will be fine. If heating it in a cast iron skillet on a grill, be sure to stir it often so it doesn’t burn or stick to the pan.

I would say a small cooker, like 4 quart
Pam says
I am wondering if you could make this up and put in a crockpot to keep it warmed up ? I know the top would be golden but the dip would stay warm and gooey !!!
Amanda Formaro says
We haven’t tested that, but imagine it would work. Let us know if you try it and what your results are!

Can I add rice or pasta and make it a casserole?

We have not tried this

Hi Amanda, I was wondering if you could use the frozen Philly Steaks that come in a box. They are thin slices & will break up when cooked. I wondered if it made a difference on the meat that was used. This dip sounds really good.
Shar says
I used the same and it was AMAZING. I got the meat very minced and was not disappointed. Recipe was perfect (I’m not a huge fan of onion). Found this two hours ago, made it, and fell in love. Good luck!

This is the best appetizer ever. I had it with warmed sweet rolls and vegetable thins crackers. I let my round steak marinate overnite in Italian Dressing so it was really tender. Thank You Amanda for taking the time everyday to share your recipes with the world.

Made this recently for a small gathering with friends and omg, the rave reviews I received. Everyone was asking for the recipe and stating that I would have to make this again when we get together later this summer. Flavors are delicious and one friend joked that her husband had to pull her away from the bowl or she would have just poured the whole thing into her mouth. LOVE
