The name says it all, 7 layers of deliciousness all in one party dip. Taco seasoned refried beans, guacamole, sour cream, salsa, Mexican cheese, tomatoes, olives, and a topping of chopped cilantro bump this dish right into one of our favorite appetizer categories. You really can’t go wrong with taco dip.

LAYERS – To season the refried beans, place them in a pot on the stovetop to warm up a bit then mix in the taco seasoning. This can be done quickly, and you do not have to actually cook the beans. The heat simply allows you to mix the beans easier. If you’d prefer, you can mix the taco seasoning straight into the sour cream layer instead, I have done this many times in the past! Then top the beans in a dish with guacamole, sour cream, salsa, shredded cheese, tomatoes, olives, and cilantro. There are many additions you can add, so mix it up a bit and suit this dip to your taste.
We highly recommend making fresh guacamole, but store-bought can be used as well.

- In a medium pot on the stovetop over medium-low heat, mix refried beans and taco seasoning mix. Pour into the bottom of a 3-5 quart dish or a 9×13 casserole dish. Allow to cool.
- Create layers in order of ingredients: guacamole, sour cream, salsa, shredded cheese, tomatoes, olives and cilantro (or shredded lettuce).
- Refrigerate covered for at least 30 minutes up to overnight to help firm.
- Serve with chips!

Go ahead and make this dip as many layers as you’d like! We sometimes add shredded lettuce, chopped onion, green onion, sliced jalapenos, and even ground beef.
This dip will last for 3-4 days when kept in an air-tight container or tightly covered with plastic wrap in the refrigerator. Note that your guacamole will brown when exposed to air, though it’s still completely safe to eat as long as it is stored properly in the fridge. The guacamole should last a bit longer than normal as it’s the first layer on top of the beans, so you should be good to make this a day in advance or a few hours ahead of time.
Serving Suggestions
Serve 7 layer dip at room temperature or chilled with a side of tortilla chips. This dip is the ultimate party appetizer, there are rarely any leftovers! Bring to football parties, potlucks, game nights, birthdays, or really any time you need a delicious appetizer you know everyone will enjoy.

Hi Amanda, I haven’t made this yet because I have a question about the amount of sour cream. Is it really 1 1/2 lbs of sour cream or should that read 1 1/2 cups of sour cream? Never had this dip and it sounds so good, I’d like to bring it to our son’s 40th birthday party.

Yes 1 1/2 pounds. Sorry for the confusion – that would be a 16 oz container and am 8 ounce container :)
