CAKE – You’ll need a strawberry cake mix, though if you’d like to try a different flavor you can easily substitute it out.
GLAZE – The glaze is made with powdered sugar (confectioners sugar), lemon juice, and chopped strawberries. You can substitute the lemon juice with water if preferred.
How to Make Strawberry Cake Mix Cookies

- Preheat the oven to 350 degrees.
- In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla together and mix well (you can use a fork or a hand mixer).
- Line a baking sheet with parchment paper and create 1 tablespoon cookie dough balls with a cookie scoop. Place the cookies about 2” apart on the baking sheet.
- Bake for 10 minutes – or until the edges start to brown. Do not over bake.
- Remove from the oven and let the cookies cool on the baking sheet while you make the glaze.
- To make the glaze, blend strawberries and lemon juice together in a food processor or blender. Blend the strawberries to a puree, or leave larger chunks.
- Add strawberry mixture to powdered sugar and mix until smooth (if the glaze is too thin, add powdered sugar. If it’s too thick, add more lemon juice or water).
- Transfer cookies to a cooling rack and spoon glaze on top of cookies.
- You can serve your cookies with just powdered sugar, or layer the glaze on top of the powdered sugar. Sprinkling it on top of the glaze works as well. However you do it, they’ll be delicious!

Yes, to freeze your cookie dough, roll them into balls and place on a parchment paper lined baking sheet. Flash freeze until the cookie dough balls are cool to the touch and no longer sticky. Place them in a large Ziploc bag and store in the freezer for 1-2 months. Flash freezing the cookie balls will help them not stick together. To bake, remove from freezer and allow to thaw for 10 minutes, follow the same baking instructions listed in the recipe card below.

- You can sprinkle with powdered sugar before or after you add the glaze. Either way works.

My cookies are In the oven now. I used half margarine/ half veg oil, added white choc pieces, 1 tsp baking powder and rolled in powdered sugar and strawberrypeach jello mixture (glaze w/o liquid).
Oh my goodness!!! These cookies are amazing. Hands down the best cookies I have ever made. So light and velvety. And the sour in the glaze just sets of the sweetness of thus beautiful pink cookie. I am truly impressed. Thank you so much for thus deliciously delicate cookies.
