Spinach Salad with Mango and Avocado
Does anyone have time for boring salads? Because I certainly don’t. We all know it too well. The sad lifeless pieces of tomato, the limp ice burg lettuce, the same dressing that’s been in your fridge for years. So in my quest to make a delicious salad recipe that was not boring, I experimented with working in some unconventional ingredients…fruit!
By no means would I consider this a “fruit salad”, but the crunchy apple and juicy mango just work so well with creamy avocado and fresh spinach, making for a fun salad to serve up this summer. It’s perfect for bringing along to summer BBQs or potlucks, or just whipping up when it’s too hot to turn on the stove.
To make this Summer Spinach Salad you’ll need:
For the dressing
- ¼ cup plain Greek yogurt
- 2 to 4 Tbsp orange juice
- 2 Tbsp honey
- ½ tsp cinnamon
- Pinch each salt and pepper
For the salad
- 3 carrots
- 2 mangoes
- 1 apple
- 1 avocado
- 8 cups fresh spinach

And the best part about this Spinach Salad? It’s so easy to make! Whisk together the dressing ingredients first. This dressing definitely hovers around the sweet side, but a pinch of salt and pepper add a crucial bit of savory flavor. Then just prepare all your salad toppings: carrots, mango, apple, and avocado! Toss it all together with a healthy dose of fresh spinach and serve.

Summer Spinach Salad

Dressing
- ¼ cup plain Greek yogurt
- 2 Tbsp orange juice 2 to 4 tablespoons
- 2 Tbsp honey
- ½ tsp cinnamon
- Pinch each salt and pepper
Salad
- 3 carrots shredded
- 2 mangoes chopped
- 1 apple chopped
- 1 avocado chopped
- 8 cups fresh spinach
Instructions
- Whisk together all dressing ingredients, adding 2 Tbsp of orange juice to start. Add more, as needed, to reach a dressing-like consistency (this will depend on how thick your Greek yogurt was).
- Prepare salad ingredients, tossing to combine everything with the spinach.
- Just before serving, drizzle the dressing over the salad and toss to combine.
