LOBSTER – The smallest lobster tails we have found are 3 ounces. You will need 18 ounces altogether for these sandwiches. You don’t need to buy the 3-ounce tails, just check per pound prices or go with what’s on sale or what’s available to you.
BUNS – You can use New England style buns or regular hot dog buns. Lightly smear the buns with butter and toast them on either a skillet or in a toaster oven.
DRESSING – If you prefer, you can substitute the horseradish mayo with the same amount of regular mayonnaise. The horseradish mayo just adds a little zing to the dressing and is not overpowering.
