LEMON JUICE – The lemon juice in this marinade provides the acidic base essential to ultra tender beef. It will prevent your steak from being tough by breaking down the fibers in the meat as it sits.
OLIVE OIL – Olive oil is the fatty base of most marinades you’ll see out there. Olive oil will give your beef moisture while taming the acidic flavor of the lemon juice.
SEASONINGS – You will need minced garlic (jarred or fresh, but preferably fresh), dried thyme, dried oregano, red pepper flakes, salt, pepper, and ground mustard. Feel free to substitute or eliminate any spices or seasonings that don’t suit your taste.

- Combine all ingredients in an immersion blender. Blend until completely mixed. Alternatively, you can use a whisk or mini-chopper.
- Place steaks in a plastic zipper bag or glass pan. Cover with steak marinade. Allow to marinate in the refrigerator for 1 hour or up to 24 hours.

Realistically, you can use any cut of steak you prefer with this marinade. Ribeye, sirloin, filet mingon, New York strip, strip steak, T-bone, and even flank steak can be used.
Serving Suggestions
You can easily prepare your steak marinade ahead of time and store it in an air-tight container, mason jar, or sealed Ziploc bag for future use. You can store the marinade in the refrigerator, if properly stored, for up to 5 days. Allow the steak to tenderize in the marinade for at minimum 1 hour or for up to 24 hours. Always store marinated steak in the refrigerator.
