From start to finish, we’re using the air fryer for this recipe. We’ve made twice baked potatoes by starting them off in the microwave, which are also delicious and save you some baking time! While we love both methods, making your twice baked potatoes in the air fryer is great for busy holidays where oven space is limited or during the dead of summer when heating up the home isn’t so appealing.

POTATO – Russet potatoes are the best for twice baked potatoes. Their thick skin provides a solid base for stuffing and are among the most popular of baking potatoes. Yukon gold potatoes will also work, but they do have a thinner skin which will crisp nicely, but not hold the stuffing as well.
STUFFING – A whipped concoction of potato, butter, salt, pepper, and heavy whipping cream make up the insides. You can add further seasonings if you want like garlic powder, paprika, onion powder, or seasoned salt. It’s perfectly fine to swap out the heavy whipping cream with regular milk for a low-fat option.
TOPPING – There’s nothing like crispy bacon bits, melty cheese, and chives atop a regular or twice baked potato. Pile it high and add cooked broccoli bits, more sour cream, and different types of cheeses if you want!
How to Make Air Fryer Twice Baked Potatoes

- Wash the russet potatoes and pat dry with a paper towel.
- Using a fork, poke holes in the potato all over. Rub olive oil, salt, and pepper on all sides of the potato. Place into the air fryer at 400F for 1 hour and 10 minutes. When done, the outside will be crisp and the inside should be fork tender.
- Carefully cut the potato in half and scoop out the inside into a bowl.
- Add butter, salt, pepper, and heavy whipping cream to the bowl with the potatoes. Use a hand mixer to whip the potatoes until light and fluffy.
EXPERT TIP: Add more butter and heavy cream if needed. Some potatoes need a bit more fat than others when whipping. - Add the whipped potato back into the potato skin using a spoon or a pastry bag with a large tip. The whipped potato will fill 4-5 half skins. Air fry for 4 minutes on 400F just to brown the top.
- Remove from air fryer and top with cheese, chives, and bacon. Optionally, you can return the potatoes to the air fryer for 2 minutes to melt the cheese.
