Pineapple Spinach Smoothie Bowl
You guys know I love smoothies, and after the holiday indulgences of the past few days, I’ve really been craving something healthy. But things are still slow paced around here, eating breakfast with the family, wearing PJs all day, that kind of thing…and that’s where these smoothie bowls come in. They’re loaded with healthy ingredients but also fun enough to serve to the whole family for breakfast. In fact, this mocha smoothie bowl is one of my favorites!

To make this recipe you’ll need:
- 1 1/2 cup pineapple chunks
- 2 cups fresh spinach
- 1 banana, chopped and frozen
- 1 Tbsp chia seeds (optional)

Probably the best thing about smoothie bowls is the toppings. Shaved coconut, sliced fruit, nuts, seeds…anything goes! I kept mine simple today, with banana, shaved coconut, pineapple, and (more) spinach, but you can put a few toppings in little bowls and let everyone top their own!

- 1 ½ cup pineapple chunks
- 2 cups fresh spinach
- 1 banana chopped and frozen
- 1 Tbsp chia seeds optional, makes it thicker and more nutritious
- Toppings: banana shaved coconut, pineapple chunks, nuts, seeds, various fruits
Instructions
- Combine all ingredients in a blender until smooth (it should be a bit thicker than a smoothie you would drink). Taste and add a bit of sweetener (honey or sugar) if you'd like).
- Top top you liking (or with whatever you have on hand) and serve.
