4 Ingredient Blueberry Hand Pies Recipe
Recipes with less than 5 ingredients can be hard to come by. Blueberry pie is not something that’s usually quick, especially if you like to make your dough from scratch. Some occasions just don’t allow for that extra time, and that’s where shortcuts come in.

These blueberry hand pies can be changed for any pie filling flavor you like, and with only four ingredients you can’t go wrong!
Our hand pies were a big hit, and no one would have guessed there were less than 5 ingredients. It’s a great recipe to keep on hand. They are delicious for an indulgent breakfast or dessert.
Ingredients you need for Blueberry Hand Pies
- 3/4 cup blueberry pie filling
- Refrigerated pie crust (box should contain 2 crusts)
- 4 tablespoons powdered sugar
- 1 tablespoon milk
Helpful kitchen tools:
- insulated baking sheet
- parchment paper
- cooling rack
- waxed paper
- 3 3/4 inch drinking glass (or a biscuit cutter)
- Pastry brush
How to Make Blueberry Hand Pies
Start by preheating your oven to 375 F and line an insulated baking sheet with parchment paper.
- Use drinking glass or biscuit cutter placed over pie dough sheet to cut out circles with a paring knife.
- Add 1 1/2 tablespoons of blueberry pie filling to the center of a circle.
- Place a second crust circle over the first and crimp the edges together with a fork.
- Cut two small slits in the top of the pie. Repeat these steps for all remaining pies, using a separate cooking sheet if needed.
- Bake in preheated oven for 20-25 minutes, or until light golden brown.
- Remove from oven and allow to cool for five minutes. Transfer to a cooling rack to cool completely.
- Combine powdered sugar with half of the milk. Continue mixing and dribbling in small amounts of milk until mixture is a thick drizzling consistency.
- Place waxed paper under cooling rack and brush glaze over the pies. Allow glaze to set and serve.
Baking Tips
- If you have a biscuit cutter it may vary in size, get as close to 3 3/4 as you can to get the same number of pies as the recipe states. We got 18 circles for 9 hand pies. We got 7 circles from each crust, then rolled out the scraps to get the rest.
- If you prefer, you can skip the glaze and have 2-ingredient hand pies!

My husband is a truck driver and the store bought hand pies are not always good and fresh. We used cherry today it’s good and easy for him to take on the road. Do you see any issues with freezing them?

Thanks for the recipe. I use canned blueberry pie filling for other recipes and I always add almond extract. About 11/2 tsp per can. Of course be careful of nut allergies to those you serve.

You can use a regular cookie sheet, but you might want to spray it with cooking spray :)

What is the equivalent to “biscuits”? I am in Australia and biscuits to us are what you call cookies! Would puff pastry be what i use?

Hi Kerry. It’s not puff pastry, not sure what they are called there. They are a flaky dough type bread roll, but not a yeast roll.

Hi Kerry, I’m also an Aussie and I just use the puff pastry which turns out fine. Just cut 2 sheets into 4 quarters, place filling on then brush edges with a little milk. Turn over half the pastry horizontally rather then triangular and crimp down the edges with a fork to securely seal then prick tops with the fork to allow any steam release. Sometimes, I also paint the tops before baking and brush with a little milk then sprinkle with a little sugar before popping into the oven.

In America what they call a biscuit is like our scones. Our biscuit is their cookies and our scones are something I can’t quite remember sorry. I remember my American friends and I had an amazing and funny conversation about this topic. However, the answers were very different across different regions. I have made them using a scroll mixture (sweet not savoury of course) .

Yes, just use parchment paper and watch them toward the end. Insulated baking sheets tend to bake more evenly and sometimes don’t require as much time as regular baking sheets :)
