I have a pretty cool cookbook called The Old Farmer’s Almanac Everyday Cookbook. I’ve made a few things from it already and they’ve all been good. this past week I’ve been in a cookie making mood, so I tried their Best Butter Cookie recipe and it was quite good! In fact, after decorating them with cream cheese frosting and caramel frosting, which were great, I actually enjoyed these plain the most.
Best Butter Cookies
1 cup (2 sticks) butter, softened
1 cup sugar
2 tablespoons orange juice
1 tablespoon vanilla extract
2 1/2 cups all purpose flour
1 teaspoon baking powder
In a large bowl, cream the butter and sugar. Add the egg, orange juice, and vanilla, beat well. Add the flower and baking powder and stir to blend. Cover the dough with plastic wrap and put it into the refrigerator to chill for 2-3 hours or until firm. Preheat oven to 375 F.
The book calls for rolling out the dough and using cookie cutters. I chilled it into a tube and did the slice and blake method. Bake 8 minutes, or until lightly browned. Cool completely before frosting.
