How to Make Mexican Chicken Casserole

- Preheat oven to 350 F and grease a 13×9 casserole dish with non-stick cooking spray.
- Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
- Layer diced chicken and black beans over the crushed chips.
- Stir 1 teaspoon of cumin into the cream of chicken soup. DO NOT add any water or milk to the soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
- Sprinkle cheese evenly over the canned tomatoes and top with remaining crushed chips.
- Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
- Garnish casserole with cilantro and chopped tomatoes.
- Serve immediately with a slice or two of fresh jalapeño.

- 15 oz. black beans drained and rinsed
- 2 cups chopped cooked chicken (rotisserie chicken works well)
- 1 teaspoon ground cumin
- 21 oz. cream of chicken soup 2 (10.5 oz) cans, DO NOT add any water or milk
- 10 oz. can Rotel tomatoes undrained
- 2 cups shredded jack cheese
- 2 cups shredded medium cheddar cheese
- 1 tomato diced
- 1 bunch cilantro rinsed and chopped
- Jalapeños optional

Before You Begin
- Do not drain Rotel tomatoes before adding to casserole.
- You can substitute Doritos for regular tortilla chips.
- For another flavor element, mix a 4 oz. can of diced chiles into the soup/cumin mixture.

I usually make a kinda similar dish with Doritos. Since Doritos are 2 to 3 times more expensive than tortilla chips I decided to try it. We liked it just as much or more. I cooked the chicken in the instapot with chili power and added a can of Ortega chili’s but other than that I made it as directed. It’s a keeper.

Making this again for my bf who eats a ton of food. This is very economical and gets better after a night in the frig. I added onion, black olives, a can of corn and replaced salsa for tomatoes. He LOVES it. Thanks!!

Made this tonight and it is good, but missing something… Found it slightly bland and I even added chopped Jalapeños with the beans. Will try again and include corn, grilled onions or maybe a Texmex seasoning to the chicken.

I felt like it was missing something ( I love spicy foods and thought it needed more of a kick to it), However I don’t make casseroles to often and I think I was comparing it to other dishes I make or have made that has a lot of seasonings and the prep time takes forever. It was quick and easy to make and tasted pretty good considering. The two people that I made it for loved it though!

Yummm this casserole was so good. I did not use soup, instead I used sour cream with cumin. I added diced green chiles and corn. It was great!

I’m shocked at how many 5 star reviews this has. I did everything according to the recipe except I didn’t put chips in it, I put it over spicy Doritos and it was just not good. The flavor wasn’t awful but the consistency was bad. I think IF I ever try this again, I would use one can of cream of chicken.

This is more of a dip than casserole. Needs rice or something. We ended up rolling it flour tortilla shells. The taste is good but it is not a casserole.

This is a delicious recipe! I served it over lime rice.
I did add the diced green chilies. And I cooked the chicken rather than using rotisserie. I seasoned it and the casserole with salt, garlic powder, chili powder and the cumin, which the recipe listed.
The flavor is incredible!!

This is the most interesting casserole I have ever made! Made it and ate it not thinking too much of it. Put in the fridge overnight and the next day heated it up for lunch and it was like magic, the chips were not crunchy, which was good and all the flavors mellowed together to make a wonderful tasting casserole. So from now on I will bake -cool-and refrigerate it overnight then serve reheated. I also added 1/2 T of smoked paprika and 1/4 tsp cayenne pepper to the soup mixture.
