    This looks sooooo yummy! I've been wanting to make some chicken salad for a while now. I've had some with dried cranberries along with apple and it's very good!

    I purposely grill "too much." (I figure if I'm going to go the the trouble to grill in the blistering Arizona heat, I may as well make it worth my time and sweat!) Tonight was one of those nights. I grilled 12 chicken breasts, but they were big, so I pounded them to an even thickness and cut them in half. Even after serving company, there are plenty leftover to freeze and use in all sorts of ways…quesadillas, pasta salads, tacos, and a chicken salad that is similar to yours…we discovered we love the addition of some apple.
