These funfetti cake mix cookies are made with only 5 ingredients, starting with a simple cake mix! They’re chewy, soft, and dotted with a rainbow of colorful sprinkles to suit any celebration.
Why this recipe works
Funfetti cake is a classic celebratory dessert from birthdays to graduations and everything in between. But when that extra cake mix box you thought you would use sits alone in the pantry it’s never a bad idea to shape them into funfetti cake mix cookies, whether you’re celebrating or not.
Optionally top them with vanilla frosting like we did in our confetti cake mix cookies then garnish with additional sprinkles. They’ll be just like a poppable and portable funfetti cake disguised as a cookie!

CAKE MIX – You’ll need a standard 15.25 ounce box of funfetti cake mix, the kind that uses vegetable oil, eggs, and water. However, you will not need the water for these cookies. Please follow the ingredients we have provided in the recipe card at the end of this post as you’ll be using sour cream in addition to the vegetable oil and eggs.
SPRINKLES – Rainbow jimmies are the best kind of sprinkle to use when it comes to mixing into batters, whether that be cupcakes, cakes, cookies, you name it. Rainbow jimmies don’t tend to bleed their color when met with wet batter.Â
SOUR CREAM – The sour cream adds moisture to the cookies.

- Preheat the oven to 350°F.
- In a large mixing bowl, stir together the cake mix, oil, eggs, and sour cream until fully combined. Fold in rainbow jimmies until evenly distributed.
- Use a cookie dough scoop or tablespoon to drop the cookie dough in mounds onto a baking sheet lined with parchment paper. (We made 2 tablespoon size cookies.)
- Bake cookies for 11 minutes, until puffed and set.
- Allow cookies to cool for 1-2 minutes and then transfer to a cooling rack to cool completely.
