Cobb Salad is full of delicious ingredients including several lettuces, bacon, chicken breast, hard boiled eggs, tomato, chives, and blue cheese. The salad is assembled by combining the lettuces and layering the other ingredients in rows on top.
Just as loved as the famous Caesar Salad, a Cobb Salad is incredibly popular.
Why this recipe is a favorite
One of America’s favorite salads, this salad hailed from the Brown Derby Restaurant in Hollywood, California. The restaurant was known as a favorite eating establishment of Hollywood stars. Then in 1980 The Brown Derby abruptly closed its doors forever. The domed roof of the former restaurant still stands and was incorporated into a shopping center.
The origins of the Cobb Salad are up for discussion. Some say it was invented by the restaurant’s executive chef, Robert Kreis, who created it for the restaurant’s launch in 1929. Others believe that Robert Howard Cobb himself created the much loved salad one evening while searching the kitchen for something to eat.
No matter who created it, the famous Cobb Salad recipe has stood the test of time, even if the restaurant didn’t.
Cobb Salad is traditionally served with the restaurant’s house-made “French” dressing. This is not the orange French dressing that you purchase from the grocery store, but rather a red wine vinaigrette.

The key to the presentation of this salad is the signature rows of ingredients on top of the lettuces.
- Start by combining all of the salad dressing ingredients in a mason jar.
- Put the lid on and close it tightly. Shake the jar vigorously until the dressing begins to emulsify. Place it in the refrigerator while you make the salad.
- Combine all of the chopped lettuces into a large shallow salad bowl.
- Place the remaining salad ingredients in rows across the top of the lettuce bed.
- Serve with salad tongs and chilled dressing.

- ½ head Romaine lettuce chopped
- 1 bunch curly endive torn into small pieces
- 1 bunch watercress large stems removed, chopped
- 2 tablespoon fresh chives snipped
- 1 cup tomato diced
- 1 cup cooked chicken breast diced
- 6 strips uncured bacon cooked, diced
- 1 avocado peeled and diced
- 3 hard boiled eggs peeled and chopped small
- ½ cup Roquefort cheese crumbled
Brown Derby French Dressing
- ¼ cup water
- ¼ cup red wine vinegar
- ¼ tsp sugar
- 1 ½ tsp lemon juice
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Worcestershire sauce
- ¾ tsp dry mustard
- 1 clove garlic peeled and minced
- ¼ cup extra virgin olive oil
- ¾ cup grapeseed oil

Very lovely presentation. I’ve made Cobb Salads for years, and your recipe was a definite reminder to use more than one lettuce. An easy way to remember all the ingredients in a Cobb Salad is this acronym: EAT COBB — egg, avocado, tomato, chicken, onion, bacon and blue.
