Lamb is a meat that cooks quickly and can dry out easily, therefore it’s best to have it at room temperature so that it evenly cooks.

- Preheat oven to 375 F.
- Whisk all ingredients (except lamb chops) together in a bowl.
- Using gloved hands, massage oil and spice mixture all over both sides of the lamb chops.
- Heat a large (dry) oven proof skillet over medium-high heat. Once the skillet is hot, add the lamb chops.
- Sear chops on one side for 3-5 minutes. Turn chops over and sear another 2-4 minutes.
- Place skillet in oven, uncovered, and bake for 10 minutes (for medium rare).
EXPERT TIP – Lamb is best when cooked to medium-rare, but if you prefer medium increase the time in the oven to 15 minutes instead of 10. - Remove from oven and transfer chops from skillet to a cutting board and tent with foil. Allow to rest for 5 minutes.
