This Baileys Irish Cream Chocolate Fudge is a great festive treat to bring to a St. Patrick’s Day gathering. These bite-sized delights are decorated with shamrock and gold coin toppings along with green sparkly sugar sprinkles. All that fresh, green color has me thinking of Spring already!
This recipe uses mini marshmallows and butter which adds to its ultra-smooth texture. It also can be made on the stove top in a medium-large pot for 15 minutes. It has to set for 30 minutes at room temperature and then 1 hour in the refrigerator. You can store it in the fridge for up to 5 days. When taking it out of the refrigerator I suggest letting it cool to room temp before devouring!

- 1/2 cup heavy cream (heavy whipping cream works as well)
- 1/2 teaspoon kosher salt
- 1 teaspoon (or more) Baileys Original Irish Cream
- 12 ounces semisweet chocolate (use the best quality you can find, it does make a difference, you can also substitute dark chocolate morsels)
- Optional: Seasonal holiday sprinkles

Before You Begin
Instructions
- Grease and 8" x 8" pan with butter and then line with 2 pieces parchment paper that are crisscrossed, leaving an overhang. Butter the paper and set aside pan. This step helps enable you to remove the formed fudge with ease from the pan later on.
- Using a medium-large saucepan over medium heat, add 4 tablespoons of butter, 3 cups mini marshmallows, 1 cup sugar, ½ cup heavy cream and ½ teaspoon kosher salt. Stir gently until the mini marshmallows are melted, this may take 8-10 minutes.
- Remove from heat, add 1 teaspoon Baileys Original Irish Cream, 12 ounces of semi sweet chocolate chip morsels and stir until the chocolate is fully melted and everything is combined. Pour into prepared 8" x 8" pan and gently shake to level out the fudge, after 5 minutes sprinkle optional holiday sprinkles and allow to cool at room temperature for 25 minutes. Cover and transfer to refrigerator and set for 1 hour.
- When the fudge is completely set, use the overhang to gently lift the fudge onto a cutting board to cut for serving. Enjoy!

Hi Joan, you can certainly add more to suit your taste. Though I wouldn’t add more than 1/4 cup because it may become runny. :)
