BEEF – Sirloin tip roast is a great choice for roast beef because it’s lean and incredibly tender when cooked right. Plus, it’s budget-friendly. You’ll need 2 1/2 pounds for this recipe. Reserve stewing meats such as chuck or round roast for things like crockpot beef stew or Mississippi pot roast where they will have plenty of time to cook low and slow.
SEASONING – This roast beef rub is made with olive oil, freshly chopped rosemary leaves, garlic salt, onion powder, and black pepper. Feel free to add in or substitute with your favorite seasoning blend.

- In a medium bowl, whisk together olive oil, rosemary, garlic salt, onion powder, and black pepper.
- If needed to hold the roast together, tie with twine.
- Rub olive oil mixture all over the roast.
- Preheat air fryer to 400 F for 5 minutes.
- Place prepared roast into the air fryer basket and cook for 10 minutes. Flip the roast. Reduce air fryer to 360 F and cook for an additional 15 minutes.
- Remove from air fryer and place on cutting board. Tent with foil and let rest 5 minutes before slicing.

Made this today and it was so good. I found I had to air fry the meat longer than what was suggested to get to 145 degrees.
Probably another 9 minutes. It turned out perfect. I also marinated the meat for about 3 hours. We loved it! Great recipie
