Cutting back drastically on carbohydrate intake often means giving up things like crackers made with flour. The beauty of these one-ingredient crackers is it’s just cheese! They are so easy to make, you’ll be like me and making a batch everyday.

CHEESE – In order to taste like Cheese Its, you’ll need to use cheddar cheese. I highly recommend using reduced fat cheddar slices because they have less oil content, which means your finished crackers won’t be greasy. I use Sargento Reduced Fat Medium Cheddar slices. I have also used Pepper Jack (reduced fat) in the same brand.
SEASONING – This is completely up to you and totally optional. I use Everything Bagel Seasoning, but you can leave them plain, sprinkle with salt or garlic salt, or use any other seasoning you love.

- Preheat oven to 300 F. Line a baking sheet with parchment paper.
- Cut slices into squares or strips. You can get about 16 squares from each slice.

- Sprinkle with Everything Bagel seasoning or any other seasoning or salt you prefer. This step is optional, no seasoning is necessary.
- Bake for 30 minutes. Remove from oven and allow to cool for 1-2 minutes before removing them to a small bowl.

Just finished my first batch of these that I made for my wife with sharp cheddar cheese. WOW!!! I also bought some pepper jack so I could try both, and those are going in the oven right after I get done with this review.
