With a handful of ingredients such as garlic, seasonings, and oil this grilled zucchini makes a naturally sweetened yet savory neutral side dish that’s not only low-carb and healthy but so delicious.
Why this recipe works
Grilled zucchini makes an appearance at almost all of our summer barbecues and cookouts. Its mild flavor is enhanced with a simple mixture of spices and seasonings which we then pop onto the grill and cook until tender with light char marks. You really can’t go wrong with grilled zucchini!

ZUCCHINI – Look for zucchini that is firm with taut green skin. Very fresh zucchini may have tiny hairs or both the stem and blossoms still attached. Cut the zucchini lengthwise into strips. Try and keep the strips fairly uniform in thickness for even cooking.
SEASONINGS – It’s likely you will not use all of the seasoning mixture. You can use this mixture on other grilled vegetables and/or meats if you like.
How to Make Grilled Zucchini

- Preheat grill.
- In a medium bowl, combine minced garlic, garlic salt, black pepper, and Italian seasoning. Whisk together, then whisk in the olive oil.
- Cut the ends off the zucchini and discard or compost. Slice zucchini lengthwise into long strips about 1/4-inch or thicker strips. You don’t want them too thin as they need to hold up to the grill.
- Place sliced zucchini onto a baking sheet and brush with the oil and seasoning mixture. Turn over and brush the other side.
- Place seasoned slices onto the hot grill. Allow to cook for 4-5 minutes then turn slices over. Cook an additional 2-3 minutes.
