You can use either mature spinach or baby spinach. We opted for mature spinach here.
Dress it up with your favorite blend of spices and seasonings. For a little heat, try tossing it with Cajun seasoning or try all purpose seasoning for a well-rounded flavor profile. It's up to you - salt and pepper are a classic.
I would not recommend using frozen spinach for this recipe as it contains a lot of extra water which in turn, causes it to be soggy.
