Cucumber Sandwiches

Ingredients
- 8 ounces cream cheese room temperature
- 1 tablespoon Italian dressing mix
- 4 each pita bread round
- 1 large cucumber very thinly sliced
- 2 teaspoon Lemon-pepper optional
- 2 teaspoon Chile-lime seasoning optional
Instructions
- In a small bowl, combine the cream cheese and Italian dressing mix.
- Spread 2 tablespoons of the cream cheese mixture on each circle of pita.
- Top with sliced cucumbers. Sprinkle with lemon-pepper and/or chile-lime seasoning. Cut into wedges and serve.
Notes
- I prefer to make cucumber sandwiches with cream cheese, but you could use butter if you prefer.
- To increase the zesty nature of these sandwiches, sprinkle them with a little lemon-pepper.
- A convenient packet of Italian dressing mix makes the perfect cream cheese spread. Alternatively, you can use your favorite flavored cream cheese. Another idea is to use dry ranch dressing!
- Packets of Italian dressing can be found near the bottled salad dressings. You’ll only need 1 tablespoon of the seasoning, so save the rest in an airtight bag. You can use as a seasoning in marinades and pasta salad.
