Rotisserie chicken is great for this recipe, but you can also use leftover chicken or cook up some breasts and/or thighs. You can shred or slice your chicken. If you really wanted, you can substitute with deli meat chicken. But the extra volume from shredded or sliced chicken makes all the difference!
You can use prepared Ranch dressing in a bottle, or make it from the powdered packages available at the grocery store. We do use a small amount of powdered Ranch dressing mix to brush on top, so just reserve a teaspoon of powdered mix for that if you make your own dressing.
