Easy Grain Salad

Ingredients

bulgur

vegetable broth

pomegranate arils

fresh mint
finely chopped

fresh parsley
finely chopped

crumbled feta cheese

Instructions
Add bulgur and broth to a medium pot. Cover and bring to a boil, then reduce heat to a simmer and cook for 12 to 15 minutes, or until bulgur is tender. Drain off any excess liquid.
Meanwhile, prepare remaining salad ingredients: chop herbs,
seed pomegranate
, crumble feta.
In a large bowl toss together all ingredients. Serve warm or chilled.
